Ingredients
For the Fritters:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups peeled and diced apples (Granny Smith or Honeycrisp)
- 1/2 cup toasted pecans or walnuts, chopped (optional)
For the Glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk (adjust for desired consistency)
- 1/2 tsp vanilla extract
- Pinch of cinnamon (optional)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Step 2: Prepare the Batter
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the melted butter, eggs, milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing just until combined.
- Fold in the diced apples and nuts (if using).
Step 3: Shape the Fritters
- Using a large spoon, scoop about 1/4 cup of batter for each fritter and place it onto the prepared baking sheet. Slightly flatten and shape them into rustic rounds. Leave some space between fritters.
Step 4: Bake
- Bake in the preheated oven for 15–18 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let the fritters cool slightly on the baking sheet.
Step 5: Glaze the Fritters
- In a small bowl, whisk together the powdered sugar, milk, vanilla, and cinnamon until smooth.
- Drizzle the glaze over the warm fritters using a spoon or dip the tops of the fritters into the glaze for a more thorough coating.
- Allow the glaze to set for a few minutes before serving.
Serving Suggestions
- Serve warm with a cup of coffee, tea, or cider.
- Add a dusting of powdered sugar for an extra decorative touch.
