Ingredients
For the Crust:
- 1 1/4 cups graham cracker crumbs (or finely crushed digestive biscuits)
- 1/4 cup granulated sugar
- 1/3 cup melted butter
For the Coconut Filling:
- 3 cups whole milk
- 1 cup coconut milk (for extra coconut flavor)
- 2/3 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 4 large egg yolks
- 1 cup sweetened shredded coconut
- 2 tsp vanilla extract
- 2 tbsp unsalted butter

- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1/4 cup toasted shredded coconut (for garnish)
Instructions
Step 1: Prepare the Crust
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
- Press the mixture firmly into a 9-inch pie dish, covering the bottom and sides evenly.
- Bake the crust for 8–10 minutes, or until lightly golden. Set aside to cool.
Step 2: Make the Coconut Filling
- In a medium saucepan, whisk together milk, coconut milk, sugar, cornstarch, and salt until smooth.
- Heat over medium heat, stirring constantly, until the mixture begins to thicken and bubble.
- In a small bowl, whisk the egg yolks. Slowly add a few tablespoons of the hot milk mixture to temper the eggs, whisking constantly.
- Pour the tempered egg mixture back into the saucepan and continue cooking for 2–3 minutes, stirring, until the filling is thick and creamy.
- Remove from heat and stir in shredded coconut, vanilla extract, and butter. Mix well.
Step 3: Assemble the Pie
- Pour the warm coconut filling into the prepared crust and smooth the top.
- Cover with plastic wrap, pressing it gently onto the surface to prevent a skin from forming.
- Chill the pie in the refrigerator for at least 4 hours, or until fully set.
Step 4: Make the Whipped Topping
- In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Spread or pipe the whipped cream over the chilled pie.
Step 5: Garnish and Serve
- Sprinkle toasted coconut on top for garnish.
- Slice and serve chilled for a creamy, tropical treat!
