Ingredients

For the Crust:

  • 1 1/4 cups graham cracker crumbs (or finely crushed digestive biscuits)
  • 1/4 cup granulated sugar
  • 1/3 cup melted butter

For the Coconut Filling:

  • 3 cups whole milk
  • 1 cup coconut milk (for extra coconut flavor)
  • 2/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 4 large egg yolks
  • 1 cup sweetened shredded coconut
  • 2 tsp vanilla extract
  • 2 tbsp unsalted butter

For the Whipped Topping:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup toasted shredded coconut (for garnish)

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
  3. Press the mixture firmly into a 9-inch pie dish, covering the bottom and sides evenly.
  4. Bake the crust for 8–10 minutes, or until lightly golden. Set aside to cool.

Step 2: Make the Coconut Filling

  1. In a medium saucepan, whisk together milk, coconut milk, sugar, cornstarch, and salt until smooth.
  2. Heat over medium heat, stirring constantly, until the mixture begins to thicken and bubble.
  3. In a small bowl, whisk the egg yolks. Slowly add a few tablespoons of the hot milk mixture to temper the eggs, whisking constantly.
  4. Pour the tempered egg mixture back into the saucepan and continue cooking for 2–3 minutes, stirring, until the filling is thick and creamy.
  5. Remove from heat and stir in shredded coconut, vanilla extract, and butter. Mix well.

Step 3: Assemble the Pie

  1. Pour the warm coconut filling into the prepared crust and smooth the top.
  2. Cover with plastic wrap, pressing it gently onto the surface to prevent a skin from forming.
  3. Chill the pie in the refrigerator for at least 4 hours, or until fully set.

Step 4: Make the Whipped Topping

  1. In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Spread or pipe the whipped cream over the chilled pie.

Step 5: Garnish and Serve

  1. Sprinkle toasted coconut on top for garnish.
  2. Slice and serve chilled for a creamy, tropical treat!
