Ingredients

For the Potatoes:

  • Medium-sized potatoes (Yukon Gold or Russet): 6-8, peeled
  • Salt: 1 teaspoon (for boiling water)

  • Unsalted butter: 3 tablespoons
  • All-purpose flour: 3 tablespoons
  • Milk: 2 cups (warm)
  • Heavy cream: ½ cup
  • Cheddar cheese (shredded): 2 cups
  • Mozzarella cheese (shredded): 1 cup

  • Chives (chopped): 2 tablespoons

Instructions

Step 1: Prepare the Potatoes

  1. Peel the potatoes and cut them into uniform chunks for even cooking (or leave whole if using baby potatoes).
  2. In a large pot, bring water to a boil and add 1 teaspoon of salt. Add the potatoes and boil until fork-tender (about 15-20 minutes).
  3. Drain and let the potatoes cool slightly. If using large potatoes, mash lightly or slice into rounds; for baby potatoes, keep them whole.

Step 2: Make the Cheese Sauce
