  • 200 g (about 7 oz) Lo Mein noodles (or egg noodles)
  • 1 bell pepper (red or green, sliced)
  • 1 carrot (cut into julienne strips)
  • 100 g (about 3.5 oz) broccoli (or other vegetables of your choice)
  • 2-3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon sesame oil
  • 1 clove garlic (minced)
  • 1 piece ginger (about 1 inch, grated)
  • Green onions or chives (for garnish)
  • Cooking oil (for the pan)

Instructions:

  1. Cook the noodles: Boil the Lo Mein noodles according to package instructions. Once cooked, drain and set aside.
  2. Marinate the beef: In a bowl, combine the beef with 1 tablespoon of soy sauce, sesame oil, minced garlic, and grated ginger. Let it marinate for about 15 minutes.
  3. Sauté the vegetables: In a large skillet or wok, heat a bit of oil over medium-high heat. Add the bell pepper, carrot, and broccoli, and stir-fry for about 3-5 minutes until they are tender but still crisp. Remove the vegetables from the pan and set aside.
  4. Cook the beef: In the same pan, add a bit more oil if necessary and cook the marinated beef for about 3-4 minutes until cooked through.
  5. Combine everything: Return the vegetables to the pan with the beef. Add the cooked noodles and the remaining soy sauce, as well as the hoisin sauce if using. Mix everything well so that the noodles are coated with the sauce and everything is heated through.
  6. Garnish and serve: Serve hot, garnished with chopped green onions or chives.
