Amish Baked Custard

Ingredients:

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 2 3/4 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg (optional, for garnish)
  • A pinch of salt

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  1. Prepare the Custard Mixture:
  • In a large mixing bowl, whisk together the eggs and sugar until well combined.
  • Gradually whisk in the milk, vanilla extract, and a pinch of salt.
  1. Strain the Mixture:
  • For a smoother texture, strain the custard mixture through a fine-mesh sieve into another bowl to remove any egg solids.
  1. Pour into Baking Dish:
  • Pour the custard mixture into a 1.5-quart or 2-quart baking dish.
  1. Prepare the Water Bath:
  • Place the baking dish in a larger baking pan or roasting pan.
  • Carefully pour hot water into the larger pan until it reaches halfway up the sides of the custard dish. This water bath helps cook the custard evenly.
  1. Bake:
  • Bake in the preheated oven for 45-55 minutes, or until the custard is set and a knife inserted in the center comes out clean.
  1. Cool and Serve:
  • Remove the custard from the oven and carefully lift it out of the water bath.
  • Let it cool to room temperature, then refrigerate for at least 2 hours before serving.
  • Garnish with a sprinkle of ground nutmeg if desired.
