Angel Chicken Rice Casserole
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 packet (1 oz) dry Italian dressing mix
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- ½ cup chicken broth
- 1 block (8 oz) cream cheese, softened
- ½ cup dry white wine (or additional chicken broth)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 2 cups cooked white or brown rice
- 1 cup shredded Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Cook the Chicken:
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, and half of the Italian dressing mix. Cook the chicken until browned on both sides, about 3-4 minutes per side. Transfer the chicken to the prepared baking dish.
- Make the Sauce:
- In the same skillet, combine the cream of mushroom soup, cream of chicken soup, chicken broth, cream cheese, white wine (or extra broth), garlic powder, onion powder, and the remaining Italian dressing mix. Stir constantly over medium heat until the cream cheese is fully melted and the mixture is smooth.
- Assemble the Casserole:
- Pour the creamy sauce over the browned chicken in the baking dish, ensuring the chicken is fully covered.
- Bake:
- Cover the baking dish with foil and bake for 25-30 minutes, until the chicken is fully cooked and tender.
- Prepare the Rice:
- While the casserole is baking, cook the rice according to package instructions.
- Finish the Casserole:
- Remove the foil and sprinkle the casserole with shredded Parmesan cheese. Return to the oven, uncovered, for an additional 5-10 minutes, or until the cheese is melted and golden.
- Serve:
- Serve the creamy chicken casserole over a bed of warm rice. Garnish with fresh parsley if desired.
Tips:
- You can substitute the rice with egg noodles or mashed potatoes for a different base.
- For extra veggies, add mushrooms, spinach, or broccoli to the casserole before baking.
This Angel Chicken Rice Casserole is creamy, comforting, and perfect for busy weeknights or a cozy family dinner! Enjoy! 🐔🍚
