Apple Fritter Bites

Crispy on the outside and soft on the inside, these bite-sized apple fritters are packed with warm spices and juicy apple chunks. Drizzle them with glaze or sprinkle with powdered sugar for an irresistible snack!

Ingredients:

  • For the Fritter Bites:
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt
  • 1/3 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter, melted
  • 1 1/2 cups peeled and diced apples (Granny Smith or Honeycrisp work great)
  • Oil for frying (vegetable or canola)
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tbsp milk (or more, as needed)
  • 1/2 tsp vanilla extract

Instructions:

  1. Prepare the Batter:
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, whisk the milk, egg, vanilla, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Gently fold in the diced apples.
  1. Heat the Oil:
  • Heat about 2 inches of oil in a deep pot or skillet over medium heat until it reaches 350°F (175°C). You can test by dropping a bit of batter into the oil—if it sizzles and rises to the top, the oil is ready.
  1. Fry the Fritter Bites:
  • Using a small cookie scoop or spoon, carefully drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan.
  • Fry for about 2-3 minutes per side, or until golden brown and cooked through.
  • Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
  1. Make the Glaze:
  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. If the glaze is too thick, add a bit more milk until you reach your desired consistency.
  1. Glaze the Fritters:
  • Once the fritters have slightly cooled, dip them in the glaze or drizzle it over the top.
  • Let the glaze set for a minute or two before serving.

Enjoy!
