Bacon Cheeseburger Meatloaf

Ingredients:

  • 1 ½ lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, chopped (about 4-5 slices)
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 large eggs
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard (yellow or Dijon)
  • Salt and pepper to taste
  • Extra bacon and cheese for topping (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Mix Ingredients: In a large bowl, combine ground beef, breadcrumbs, cheddar cheese, cooked bacon, onion, garlic, ketchup, eggs, Worcestershire sauce, mustard, salt, and pepper. Mix until just combined; do not overmix.
  3. Shape the Meatloaf: Transfer the mixture into the prepared loaf pan and shape it into a loaf.
  4. Topping (Optional): If desired, place extra bacon strips and sprinkle additional cheese on top of the meatloaf.
  5. Bake: Bake in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
  6. Cool and Serve: Let the meatloaf rest for about 10 minutes before slicing. Serve warm with extra ketchup or your favorite sauce.

Tips:

  • Serve with mashed potatoes or a side salad for a complete meal.
  • You can also add pickles or mustard to the meat mixture for extra flavor!
