Bacon, Egg, and Cheese Breakfast Casserole

Ingredients:

  • 6 slices of bacon
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 8 large eggs
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups bread cubes (French or Italian bread, preferably day-old)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup chopped fresh parsley (optional, for garnish)

Equipment:

  • 9×13 inch baking dish
  • Skillet
  • Mixing bowls
  • Whisk
  • Baking sheet (optional for bacon)

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  1. Cook the Bacon:
  • In a skillet over medium heat, cook the 6 slices of bacon until crispy. Remove the bacon and place it on paper towels to drain. Reserve about 1 tablespoon of bacon fat in the skillet.
  1. Sauté the Vegetables:
  • In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes until softened. Remove from heat and let cool slightly.
  1. Prepare the Egg Mixture:
  • In a large mixing bowl, whisk together the 8 large eggs, 1 cup whole milk, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon cayenne pepper (if using).
  1. Combine Ingredients:
  • Add the sautéed vegetables, bread cubes, and crumbled bacon (reserve a few pieces for topping if desired) to the egg mixture. Stir gently until everything is well combined.
  1. Add Cheese:
  • Fold in 1 cup shredded sharp cheddar cheese until evenly distributed.
  1. Transfer to Baking Dish:
  • Pour the mixture into a greased 9×13 inch baking dish. Spread it out evenly.
  1. Bake:
  • Bake in the preheated oven for 40-45 minutes, or until the casserole is set in the middle and lightly browned on top. A toothpick inserted should come out clean.
  1. Cool and Serve:
  • Let the casserole cool for about 10 minutes before slicing. Garnish with chopped fresh parsley if desired.

Tips for Success:

  • Make Ahead: You can assemble the casserole the night before, cover it, and refrigerate it. Just add a few extra minutes to the baking time if baking from cold.
  • Variations: Feel free to customize with different cheeses, vegetables, or meats based on your preferences.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
