Baked Chicken Taquitos

Baked chicken taquitos are a delicious and healthier alternative to the fried version. They’re perfect for a quick weeknight dinner or as a party appetizer. Here’s a tasty recipe for making them at home:

Ingredients:

For the Taquitos:

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 1 cup shredded cheddar cheese or Monterey Jack cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup salsa (mild, medium, or hot, depending on your preference)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 12-15 small flour or corn tortillas (flour tortillas are more flexible and less likely to crack)

  • 2 tablespoons olive oil or melted butter
  • 1/2 teaspoon chili powder (optional, for extra flavor)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Filling: In a large bowl, mix together the shredded chicken, shredded cheese, cream cheese, salsa, ground cumin, garlic powder, onion powder, smoked paprika (if using), and salt and pepper. Ensure the mixture is well combined.
