Barres Bounty

Ingredients:

  • 2 cups shredded coconut (sweetened or unsweetened, depending on your preference)
  • 1 cup sweetened condensed milk
  • 2 cups milk chocolate chips (or chopped milk chocolate)
  • 2 tablespoons coconut oil

Instructions:

  1. Prepare Coconut Mixture:
  • In a large bowl, combine the shredded coconut and sweetened condensed milk. Mix well until the coconut is fully coated with the condensed milk.
  1. Form Bars:
  • Line a baking dish (8×8 inches or similar) with parchment paper or lightly grease it.
  • Press the coconut mixture evenly into the bottom of the prepared dish, creating a compact layer.
  1. Chill:
  • Refrigerate the coconut mixture for about 30 minutes, or until it’s firm and set.
  1. Prepare Chocolate Coating:
  • In a heatproof bowl, combine the milk chocolate chips and coconut oil.
  • Melt the chocolate and coconut oil together over a double boiler or in the microwave in 30-second intervals, stirring until smooth.
  1. Coat Bars:
  • Remove the coconut layer from the refrigerator and cut it into bars or squares.
  • Dip each bar into the melted chocolate, ensuring it’s fully coated, and then place it on a parchment-lined tray.
  1. Set:
  • Refrigerate the chocolate-coated bars for about 30 minutes, or until the chocolate has fully set.
  1. Serve:
  • Enjoy your homemade Barres Bounty! Store them in an airtight container in the refrigerator.
