Best Ever Beef Stew
Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 3 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, chopped
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 bay leaf
- 1 cup frozen peas (optional)
- Fresh parsley, chopped (for garnish)
Equipment:
- Large pot or Dutch oven
- Mixing bowls
- Wooden spoon or spatula
Instructions:
- Prepare the Beef:
- In a bowl, toss the beef cubes with 3 tbsp flour, 1 tsp salt, and 1/2 tsp black pepper until well coated.
- Brown the Beef:
- Heat 2 tbsp olive oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches (don’t overcrowd) and brown on all sides, about 5-7 minutes per batch. Remove the beef and set aside.
- Sauté the Vegetables:
- In the same pot, add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Add Broth and Seasonings:
- Pour in the beef broth, scraping the bottom of the pot to release any browned bits. Stir in the tomato paste, Worcestershire sauce, dried thyme, bay leaf, and return the browned beef to the pot.
- Add Vegetables:
- Add the carrots, potatoes, and celery to the pot. Bring the mixture to a simmer.
- Cook the Stew:
- Cover and reduce the heat to low. Let it simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally and adjust seasoning with salt and pepper if needed.
- Add Peas (if using):
- In the last 10 minutes of cooking, stir in the frozen peas.
- Serve:
- Remove the bay leaf before serving. Garnish with fresh parsley and enjoy your comforting beef stew!
