Best Ever Easy Vegetable Beef Soup

A delicious and comforting soup made with tender beef, a medley of vegetables, and savory broth. It’s easy to make and perfect for cozy meals!


Ingredients:

  • 1 lb beef stew meat (or ground beef)
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 2 large potatoes, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Brown the Beef:
  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the beef stew meat (or ground beef) and brown on all sides for 5-7 minutes. If using ground beef, cook until no longer pink. Remove the beef from the pot and set aside.
  1. Cook the Vegetables:
  • In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the onions are soft and translucent. Add the minced garlic and cook for another minute.
  1. Add the Broth and Tomatoes:
  • Pour in the beef broth and diced tomatoes (with their juices). Add the diced potatoes, bay leaf, thyme, and oregano. Stir to combine.

  • Return the browned beef to the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer, uncovered, for 30-40 minutes, or until the beef is tender and the vegetables are cooked through.
  1. Add Frozen Vegetables:
  • Stir in the frozen peas and corn, and simmer for an additional 5 minutes until they are heated through. Adjust the seasoning with salt and black pepper to taste.
  1. Serve:
  • Remove the bay leaf and ladle the soup into bowls. Garnish with fresh parsley if desired, and serve hot.
