Best Ever Easy Vegetable Beef Soup
A delicious and comforting soup made with tender beef, a medley of vegetables, and savory broth. It’s easy to make and perfect for cozy meals!
Ingredients:
- 1 lb beef stew meat (or ground beef)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 large carrots, sliced
- 2 celery stalks, sliced
- 2 large potatoes, diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Brown the Beef:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the beef stew meat (or ground beef) and brown on all sides for 5-7 minutes. If using ground beef, cook until no longer pink. Remove the beef from the pot and set aside.
- Cook the Vegetables:
- In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the onions are soft and translucent. Add the minced garlic and cook for another minute.
