Ingredients:
- 500g all-purpose flour
- 60g sugar
- 10g salt
- 20g fresh baker’s yeast
- 300ml warm milk
- 2 eggs
- 100g butter at room temperature
Instructions:
- Prepare the yeast: In a bowl, dissolve the yeast in the warm milk. Let it sit for 10 minutes until the mixture becomes frothy.
- Mix the dry ingredients: In a large mixing bowl, combine the flour, sugar, and salt.
- Add the wet ingredients: Make a well in the center of the flour mixture and pour in the milk with the yeast, as well as the beaten eggs. Mix until the dough starts to come together.
- Knead the dough: Gradually incorporate the butter and knead the dough for about 10 minutes until it is smooth and elastic. You can use a stand mixer with a dough hook attachment for this step.
- First rise: Shape the dough into a ball, place it in a lightly oiled bowl, and cover with a clean cloth. Let it rise in a warm place for about 1.5 hours until the dough has doubled in size.
- Shape the brioche: Punch down the dough to release the air, then divide it into equal portions according to the desired shape (balls, braid, etc.). Place the dough pieces in a brioche mold or on a baking sheet.
- Second rise: Cover again and let rise for about 1 hour.
- Preheat the oven: Preheat your oven to 180°C (350°F).
- Bake: Brush the brioche with milk or a beaten egg mixture for a nice golden color. Bake in the oven for 25 to 30 minutes until the brioche is golden brown.
- Cool: Remove the brioche from the oven and let it cool on a wire rack.
