Ingredients:

  • 500g all-purpose flour
  • 60g sugar
  • 10g salt
  • 20g fresh baker’s yeast
  • 300ml warm milk
  • 2 eggs
  • 100g butter at room temperature

Instructions:

  1. Prepare the yeast: In a bowl, dissolve the yeast in the warm milk. Let it sit for 10 minutes until the mixture becomes frothy.
  2. Mix the dry ingredients: In a large mixing bowl, combine the flour, sugar, and salt.
  3. Add the wet ingredients: Make a well in the center of the flour mixture and pour in the milk with the yeast, as well as the beaten eggs. Mix until the dough starts to come together.
  4. Knead the dough: Gradually incorporate the butter and knead the dough for about 10 minutes until it is smooth and elastic. You can use a stand mixer with a dough hook attachment for this step.
  5. First rise: Shape the dough into a ball, place it in a lightly oiled bowl, and cover with a clean cloth. Let it rise in a warm place for about 1.5 hours until the dough has doubled in size.
  6. Shape the brioche: Punch down the dough to release the air, then divide it into equal portions according to the desired shape (balls, braid, etc.). Place the dough pieces in a brioche mold or on a baking sheet.
  7. Second rise: Cover again and let rise for about 1 hour.
  8. Preheat the oven: Preheat your oven to 180°C (350°F).
  9. Bake: Brush the brioche with milk or a beaten egg mixture for a nice golden color. Bake in the oven for 25 to 30 minutes until the brioche is golden brown.
  10. Cool: Remove the brioche from the oven and let it cool on a wire rack.
