Carrot Apple Slaw

Ingredients:

  • 2 cups shredded carrots (about 3-4 medium carrots)
  • 2 cups shredded apples (about 2 medium apples; Granny Smith or Fuji work well)
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Dressing:

  • 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables:
  • In a large bowl, combine the shredded carrots and shredded apples. If using, add the raisins or dried cranberries and nuts.
  1. Make the Dressing:
  • In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth.
  1. Combine:
  • Pour the dressing over the carrot-apple mixture and toss until everything is well coated.
  1. Chill and Serve:
  • Let the slaw sit in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled.

Tips:

  • Add Spice: For a kick, add a pinch of cayenne or chili powder.
  • Customize: Feel free to add shredded cabbage or sliced bell peppers for extra crunch.
