Chicken Alfredo Lasagna Roll-Ups
Ingredients:
- 8-10 lasagna noodles
- 2 cups cooked chicken, shredded (rotisserie works great)
- 1 1/2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups Alfredo sauce (store-bought or homemade)
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Cook the Noodles:
- Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean surface.
- Prepare the Filling:
- In a bowl, mix together the shredded chicken, ricotta cheese, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper until well combined.
- Assemble the Roll-Ups:
- Spread a thin layer of Alfredo sauce on the bottom of a baking dish. Take a lasagna noodle and spread a generous amount of the chicken filling along one end. Roll it up tightly and place it seam-side down in the baking dish. Repeat with remaining noodles.
- Top with Sauce and Cheese:
- Once all roll-ups are in the dish, pour the remaining Alfredo sauce over the top. Sprinkle with the remaining mozzarella cheese.
- Bake:
- Preheat the oven to 350°F (175°C). Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Serve:
- Let cool slightly before serving. Garnish with fresh parsley if desired.
