Chicken Dijonnaise Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine (such as Sauvignon Blanc or Chardonnay)
  • 1/2 cup chicken broth
  • 1/2 cup Dijon mustard
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

Step 1: Prepare the Chicken

  1. Season the Chicken:
  • Season the chicken breasts with salt and pepper on both sides.
  1. Brown the Chicken:
  • In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 2: Make the Sauce

  1. Sauté the Onion and Garlic:
  • In the same skillet, add the chopped onion and cook until soft and translucent, about 3 minutes. Add the minced garlic and cook for an additional 30 seconds, until fragrant.
  1. Deglaze with Wine:
  • Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Let the wine simmer for 2-3 minutes, reducing slightly.
  1. Add Broth and Mustard:
  • Stir in the chicken broth and Dijon mustard, mixing well. Let the mixture simmer for 2 minutes.
  1. Add Cream:
  • Reduce the heat to low and stir in the heavy cream. Let the sauce simmer for another 2-3 minutes, or until it thickens slightly.

Step 3: Combine and Serve

  1. Return Chicken to Skillet:
  • Return the chicken breasts to the skillet, spooning some of the sauce over the top. Simmer for a few minutes, allowing the chicken to heat through and absorb the flavors.
  1. Garnish and Serve:
  • Garnish with chopped fresh parsley before serving.
  1. Enjoy:
  • Serve the Chicken Dijonnaise with rice, mashed potatoes, or a side of vegetables to enjoy a complete meal.

Tips:

  • Wine Substitute: If you prefer not to use wine, you can substitute with additional chicken broth or a splash of white grape juice.
  • Mustard Varieties: Adjust the amount of Dijon mustard to taste if you prefer a milder or stronger mustard flavor.

This Chicken Dijonnaise is a rich and creamy dish with a delightful tang from the Dijon mustard, perfect for a comforting dinner!
