Chicken Fritters
Ingredients:
- 25 ounces leftover shredded chicken (or 2 cans of drained chicken)
- 1 teaspoon Dijon mustard
- 1 large egg
- 1/3 teaspoon dried thyme
- 1/2 cup breadcrumbs
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- Oil for frying (olive or vegetable oil)
Instructions:
- Prepare the Chicken Mixture:
- In a large mixing bowl, combine the shredded chicken, Dijon mustard, egg, breadcrumbs, dried thyme, onion powder, garlic powder, salt, and black pepper.
- Mix thoroughly until all ingredients are well incorporated and the mixture holds together.
- Form the Fritters:
- Shape the chicken mixture into small patties, about 2 inches in diameter. The mixture should make approximately 12-15 fritters.
- Heat the Oil:
- In a large skillet, heat a generous amount of oil over medium heat. You’ll need enough oil to coat the bottom of the skillet and fry the fritters evenly.
- Fry the Fritters:
- Carefully place the patties into the hot oil, making sure not to overcrowd the skillet. Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Use a slotted spoon to transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
- Serve:
- Serve the chicken fritters warm with your favorite dipping sauce. They are perfect as an appetizer or a main meal.
Tips:
- Dipping Sauces: These fritters pair well with a variety of dipping sauces such as ranch, barbecue, or honey mustard.
- Texture: If the mixture is too wet, add a bit more breadcrumbs to help the fritters hold their shape.
- Make-Ahead: You can prepare the fritters ahead of time and freeze them. Reheat in a hot oven or skillet before serving.
These Chicken Fritters are crispy on the outside and tender on the inside, making them a delicious and versatile addition to any meal. Enjoy your cooking! 🍗✨
