Cinnamon Sugar French Toast Muffins
Ingredients:
- For the Muffins:
- 4 cups bread cubes (about 6 slices of bread; use brioche or challah for richness)
- 4 large eggs
- 1 cup milk
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped pecans or walnuts
- For the Topping:
- 1/4 cup melted butter
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Prepare the Bread:
- Cut the bread into cubes and place them in a large bowl. If your bread is fresh, let it sit out for a bit to dry out slightly.
- Make the Egg Mixture:
- In another bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined.
- Combine:
- Pour the egg mixture over the bread cubes. If using, fold in the chopped nuts. Let the mixture sit for about 10 minutes, allowing the bread to soak up the liquid.
- Fill the Muffin Tin:
- Divide the bread mixture evenly among the muffin cups, filling each about 3/4 full.
- Bake:
- Bake in the preheated oven for 18-20 minutes, or until the muffins are set and lightly golden.
- Prepare the Cinnamon Sugar Topping:
- While the muffins bake, combine melted butter, sugar, and cinnamon in a small bowl.
- Coat the Muffins:
- Once baked, remove the muffins from the oven and let them cool for a few minutes. Brush the tops with the melted butter mixture and sprinkle with additional cinnamon sugar.
- Serve:
- Enjoy warm, drizzled with maple syrup or fresh fruit!
Tips:
- For extra flavor, add a pinch of nutmeg to the egg mixture.
- These muffins can be made ahead and stored in an airtight container for a few days, making them a perfect grab-and-go breakfast!
