Cornish Pasties

Ingredients:

For the Pastry:

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 1/4 cup cold water (more if needed)

For the Filling:

  • 1 cup diced beef (chuck or similar)
  • 1 medium potato, peeled and diced
  • 1 medium onion, finely chopped
  • 1/2 cup diced swede (rutabaga) (optional)
  • Salt and pepper to taste
  • 1 tsp dried thyme (optional)
  • 1 egg (for egg wash)

Instructions:

  1. Make the Pastry:
  • In a bowl, combine 2 cups flour and 1/4 tsp salt. Add the cold, cubed butter and rub it into the flour until the mixture resembles breadcrumbs.
  • Gradually add cold water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  1. Prepare the Filling:
  • In a bowl, combine diced beef, potato, onion, and swede (if using). Season with salt, pepper, and thyme.
  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  1. Roll Out the Pastry:
  • On a floured surface, roll out the pastry to about 1/8 inch thick. Cut into circles (about 6-7 inches in diameter).
  1. Fill the Pasties:
  • Place a generous spoonful of filling on one half of each pastry circle. Brush the edges with water, then fold the other half over to enclose the filling. Press the edges together to seal, and crimp with a fork or by hand.
  1. Brush and Bake:
  • Place the pasties on the prepared baking sheet. Beat the egg and brush the tops of the pasties for a golden finish. Cut a small slit in the top of each pasty to allow steam to escape.
  • Bake for 30-35 minutes, or until golden brown.
  1. Serve:
  • Allow to cool slightly before serving. Enjoy your delicious Cornish pasties warm or at room temperature!
