Cracker Barrel-Style Meatloaf
Ingredients:
- 1 ½ lbs ground beef
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 1 cup milk
- 2 large eggs
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 cup ketchup (divided)
- 2 tbsp brown sugar (optional, for sweetness)
- 1 tbsp Worcestershire sauce
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Mix Ingredients: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, milk, eggs, salt, pepper, garlic powder, thyme, ½ cup of ketchup, Worcestershire sauce, and brown sugar (if using). Mix until just combined; don’t overmix.
- Shape the Meatloaf: Transfer the mixture to a loaf pan and shape it into a loaf.
- Top with Ketchup: Spread the remaining ½ cup of ketchup evenly over the top of the meatloaf.
- Bake: Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
- Cool and Slice: Let the meatloaf rest for about 10 minutes before slicing. Serve warm.
