Cracker Barrel-Style Meatloaf

Ingredients:

  • 1 ½ lbs ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 cup milk
  • 2 large eggs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 cup ketchup (divided)
  • 2 tbsp brown sugar (optional, for sweetness)
  • 1 tbsp Worcestershire sauce

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, milk, eggs, salt, pepper, garlic powder, thyme, ½ cup of ketchup, Worcestershire sauce, and brown sugar (if using). Mix until just combined; don’t overmix.
  3. Shape the Meatloaf: Transfer the mixture to a loaf pan and shape it into a loaf.
  4. Top with Ketchup: Spread the remaining ½ cup of ketchup evenly over the top of the meatloaf.
  5. Bake: Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  6. Cool and Slice: Let the meatloaf rest for about 10 minutes before slicing. Serve warm.

Tips:

  • Pair with mashed potatoes and green beans for a classic meal.
  • You can add chopped bell peppers or other veggies to the mix for extra flavor.
