Cranberry Orange Bread Recipe

Ingredients

For the Bread:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup fresh or frozen cranberries (roughly chopped)
  • Zest of 1 orange
  • 1/2 cup fresh orange juice
  • 1 teaspoon vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • 1 teaspoon orange zest

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients:
    In a large bowl, whisk together the flour, sugar, baking powder, salt, and baking soda.
  3. Combine Wet Ingredients:
    In another bowl, whisk together the melted butter, egg, orange juice, vanilla extract, and orange zest until well combined.
  4. Combine Mixtures:
    Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the chopped cranberries.
  5. Bake:
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool:
    Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  7. Make the Glaze:
    In a small bowl, mix the powdered sugar, orange juice, and zest until smooth. Adjust the consistency with more orange juice or powdered sugar as needed.
  8. Glaze the Bread:
    Once the bread is completely cool, drizzle the glaze over the top.

Tips

  • For extra flavor, you can add a pinch of cinnamon or nutmeg to the dry ingredients.
  • This bread freezes well; wrap it tightly in plastic wrap and foil for up to 3 months.
