Creamy Cheesy Chicken Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Chicken:
- Season the chicken breasts with salt and pepper on both sides.
- Cook the Chicken:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Remove chicken from skillet and set aside.
- Make the Creamy Cheesy Sauce:
- In the same skillet, reduce the heat to medium. Add minced garlic and sauté for about 1 minute until fragrant.
- Combine Ingredients:
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in the heavy cream, mozzarella cheese, Parmesan cheese, and Italian seasoning. Stir continuously until the cheeses are melted and the sauce is smooth and creamy.
- Simmer and Finish:
- Bring the sauce to a gentle simmer. Return the cooked chicken breasts to the skillet and spoon some of the sauce over them.
- Simmer for an additional 2-3 minutes to heat the chicken through and allow it to absorb some of the flavors of the sauce.
- Serve:
- Garnish with chopped fresh parsley.
- Serve the creamy cheesy chicken hot, with additional sauce spooned over the top if desired.
