Creamy Cheesy Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
  • Season the chicken breasts with salt and pepper on both sides.
  1. Cook the Chicken:
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  • Remove chicken from skillet and set aside.
  1. Make the Creamy Cheesy Sauce:
  • In the same skillet, reduce the heat to medium. Add minced garlic and sauté for about 1 minute until fragrant.
  1. Combine Ingredients:
  • Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream, mozzarella cheese, Parmesan cheese, and Italian seasoning. Stir continuously until the cheeses are melted and the sauce is smooth and creamy.
  1. Simmer and Finish:
  • Bring the sauce to a gentle simmer. Return the cooked chicken breasts to the skillet and spoon some of the sauce over them.
  • Simmer for an additional 2-3 minutes to heat the chicken through and allow it to absorb some of the flavors of the sauce.
  1. Serve:
  • Garnish with chopped fresh parsley.
  • Serve the creamy cheesy chicken hot, with additional sauce spooned over the top if desired.

Optional Tips:

  • You can add other vegetables like spinach, sun-dried tomatoes, or mushrooms to the sauce for added flavor and texture.
