Crispy Herb-Infused Potato Squares

Ingredients:

  • 4 large potatoes, peeled and grated
  • 2 cups fresh parsley, finely chopped
  • 1 tablespoon green onions or chives, finely chopped
  • 2 tablespoons cornstarch
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • Oil for frying (vegetable or olive oil)

Instructions:

  1. Prepare the Potatoes:
  • Grate the potatoes using a box grater or food processor. Place the grated potatoes in a fine-mesh strainer to drain the excess moisture.
  • Next, transfer the shredded potatoes into a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible to ensure they fry up crispy.
  1. Mix the Ingredients:
  • In a large mixing bowl, combine the grated potatoes, chopped parsley, green onions (or chives), and cornstarch. Season with salt and pepper.
  • Mix well to ensure the cornstarch is evenly distributed and all the ingredients are thoroughly combined.
  1. Shape the Potato Squares:
  • Spread the potato mixture evenly on a flat surface (such as a cutting board or large plate) to about ¼ inch thick.
  • Use a knife or pizza cutter to divide the flattened mixture into small squares, approximately 2 inches on each side.
  1. Fry the Potato Squares:
  • Heat the oil in a large frying pan over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of potato into the oil—if it sizzles, the oil is ready.
  • Fry the potato squares in batches for 2-3 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan to ensure even frying.
  1. Drain Excess Oil:
  • Once fried, remove the potato squares from the oil using a slotted spoon. Place them on a plate lined with paper towels to absorb any excess oil.
  1. Serve:
  • Serve the crispy potato squares warm as a side dish or appetizer. They’re perfect on their own, or you can pair them with a dipping sauce like sour cream, garlic aioli, or ketchup.

Tips:

  • To add more flavor, mix in grated Parmesan cheese or finely chopped rosemary into the potato mixture before frying.
  • For extra crispiness, you can double-fry the squares by frying them once, letting them cool, and frying again for another minute or two.

These Crispy Herb-Infused Potato Squares are packed with fresh flavors and offer a perfect blend of crunch on the outside and softness on the inside. They’re a great snack or side for any meal! 🥔🌿
