Crock Pot Beef Stew Recipe

Ingredients:

  • 2 pounds (900 g) beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for browning the beef, optional)
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef (Optional):
  • In a skillet over medium-high heat, heat the olive oil. Season the beef cubes with salt and pepper, then brown them in batches until browned on all sides. This step adds extra flavor but can be skipped if you’re short on time.
  1. Add Ingredients to Crock Pot:
  • Place the browned (or raw) beef in the crock pot. Add the carrots, potatoes, onion, and garlic.
  1. Mix the Broth:
  • In a separate bowl, combine the beef broth, diced tomatoes, tomato paste, thyme, rosemary, bay leaf, and additional salt and pepper. Pour this mixture over the beef and vegetables in the crock pot.
  1. Cook:
  • Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the flavors meld.
  1. Thicken the Stew (Optional):
  • If you prefer a thicker stew, mix the flour with a little cold water to make a slurry. Stir it into the stew during the last 30 minutes of cooking.
