Crockpot Cowboy Soup
Ingredients:
- 1 lb ground beef or turkey
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 2 cups beef broth
- 1 packet ranch seasoning mix
- 1 packet taco seasoning
- 1 bell pepper, chopped
- Salt and pepper to taste
Instructions:
- Brown the Meat: In a skillet, brown the ground beef or turkey with the chopped onion and garlic. Drain excess fat.
- Combine Ingredients: In the crockpot, combine the browned meat, diced tomatoes, kidney beans, black beans, corn, beef broth, ranch seasoning, taco seasoning, and bell pepper.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Season: Taste and adjust salt and pepper as needed before serving.
- Serve: Ladle into bowls and enjoy! Top with cheese, sour cream, or tortilla chips if desired.
Tips:
- Feel free to add any other veggies you like, such as zucchini or carrots.
- This soup freezes well, so consider making a double batch!
