Crockpot Cowboy Soup

Ingredients:

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups beef broth
  • 1 packet ranch seasoning mix
  • 1 packet taco seasoning
  • 1 bell pepper, chopped
  • Salt and pepper to taste

Instructions:

  1. Brown the Meat: In a skillet, brown the ground beef or turkey with the chopped onion and garlic. Drain excess fat.
  2. Combine Ingredients: In the crockpot, combine the browned meat, diced tomatoes, kidney beans, black beans, corn, beef broth, ranch seasoning, taco seasoning, and bell pepper.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Season: Taste and adjust salt and pepper as needed before serving.
  5. Serve: Ladle into bowls and enjoy! Top with cheese, sour cream, or tortilla chips if desired.

Tips:

  • Feel free to add any other veggies you like, such as zucchini or carrots.
  • This soup freezes well, so consider making a double batch!
