Crockpot Goulash Recipe

Ingredients:

  • 1 pound (450 g) ground beef (or turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth
  • 2 teaspoons paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups elbow macaroni (uncooked)
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Meat:
  • In a skillet over medium heat, brown the ground beef with the chopped onion and garlic until fully cooked. Drain any excess fat.
  1. Add to Crockpot:
  • Transfer the cooked beef mixture to the crockpot. Add the diced bell pepper, diced tomatoes, tomato sauce, beef broth, paprika, Italian seasoning, salt, and pepper. Stir to combine.
  1. Cook:
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  1. Add Macaroni:
  • About 30 minutes before serving, stir in the uncooked elbow macaroni. Cover and continue to cook until the pasta is tender.
  1. Serve:
  • If desired, sprinkle shredded cheddar cheese on top before serving. Garnish with fresh parsley.
