Delicious Yogurt Tart

Ingredients:

For the Crust:

  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (115g) unsalted butter, cold and cut into cubes
  • 1 large egg yolk
  • 1/4 teaspoon salt

For the Yogurt Filling:

  • 2 cups (500g) plain Greek yogurt or regular yogurt (full-fat is best for creaminess)
  • 3/4 cup (150g) granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest (optional, for extra flavor)
  • 2 tablespoons all-purpose flour (to thicken)

For Garnish (optional):

  • Fresh fruit (such as berries or sliced fruit)
  • Mint leaves
  • Powdered sugar for dusting

Instructions:

  1. Prepare the Crust:
  2. In a food processor, combine the flour, sugar, and salt. Pulse a few times to mix.
  3. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
  4. Add the egg yolk and pulse until the dough starts to come together. If needed, add a small amount of cold water, 1 tablespoon at a time, until the dough holds together.
  5. Turn the dough out onto a floured surface, gather it into a ball, and flatten it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat the Oven:
  7. Preheat your oven to 350°F (175°C).
  8. Roll Out and Bake the Crust:
  9. On a floured surface, roll out the chilled dough to fit a 9-inch (23 cm) tart pan. Gently press the dough into the pan and trim the edges.
  10. Prick the bottom of the crust with a fork to prevent bubbling.
  11. Bake for 15-20 minutes, or until the crust is lightly golden. Allow to cool completely on a wire rack.
  12. Prepare the Yogurt Filling:
  13. In a large bowl, whisk together the yogurt and sugar until smooth.
  14. Add the eggs, one at a time, whisking well after each addition.
  15. Stir in the vanilla extract, lemon zest (if using), and flour. Mix until fully combined.
  16. Bake the Tart:
  17. Pour the yogurt filling into the cooled crust and smooth the top.
  18. Bake for 30-35 minutes, or until the filling is set and slightly golden around the edges. The center should still have a slight jiggle.
  19. Cool and Garnish:
  20. Allow the tart to cool completely at room temperature before transferring it to the refrigerator. Chill for at least 2 hours or until fully set.
  21. Garnish with fresh fruit, mint leaves, or a dusting of powdered sugar if desired before serving.
