Delicious Yogurt Tart
Ingredients:
For the Crust:
- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/2 cup (115g) unsalted butter, cold and cut into cubes
- 1 large egg yolk
- 1/4 teaspoon salt
For the Yogurt Filling:
- 2 cups (500g) plain Greek yogurt or regular yogurt (full-fat is best for creaminess)
- 3/4 cup (150g) granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest (optional, for extra flavor)
- 2 tablespoons all-purpose flour (to thicken)
For Garnish (optional):
- Fresh fruit (such as berries or sliced fruit)
- Mint leaves
- Powdered sugar for dusting
Instructions:
- Prepare the Crust:
- In a food processor, combine the flour, sugar, and salt. Pulse a few times to mix.
- Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and pulse until the dough starts to come together. If needed, add a small amount of cold water, 1 tablespoon at a time, until the dough holds together.
- Turn the dough out onto a floured surface, gather it into a ball, and flatten it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Roll Out and Bake the Crust:
- On a floured surface, roll out the chilled dough to fit a 9-inch (23 cm) tart pan. Gently press the dough into the pan and trim the edges.
- Prick the bottom of the crust with a fork to prevent bubbling.
- Bake for 15-20 minutes, or until the crust is lightly golden. Allow to cool completely on a wire rack.
- Prepare the Yogurt Filling:
- In a large bowl, whisk together the yogurt and sugar until smooth.
- Add the eggs, one at a time, whisking well after each addition.
- Stir in the vanilla extract, lemon zest (if using), and flour. Mix until fully combined.
- Bake the Tart:
- Pour the yogurt filling into the cooled crust and smooth the top.
- Bake for 30-35 minutes, or until the filling is set and slightly golden around the edges. The center should still have a slight jiggle.
- Cool and Garnish:
- Allow the tart to cool completely at room temperature before transferring it to the refrigerator. Chill for at least 2 hours or until fully set.
- Garnish with fresh fruit, mint leaves, or a dusting of powdered sugar if desired before serving.
