No-Bake Decadent Chocolate Éclair Dessert
Ingredients:
- 2 packages (3.4 oz each) instant vanilla pudding mix
- 3 cups cold milk
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- 1 box (14.4 oz) graham crackers
- 1 cup semisweet chocolate chips
- 1/3 cup heavy cream
- 2 tablespoons light corn syrup
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Pudding Mixture:
- In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and thickened, about 2-3 minutes.
- Gently fold in the whipped topping until well combined and the mixture is smooth.
- Assemble the Dessert:
- Line the bottom of a 9×13 inch baking dish with a single layer of graham crackers, breaking them as necessary to fit.
- Spread half of the pudding mixture evenly over the graham crackers.
- Add another layer of graham crackers on top of the pudding mixture.
- Spread the remaining pudding mixture over the second layer of graham crackers.
- Finish with a final layer of graham crackers on top.
- Prepare the Chocolate Ganache:
- In a microwave-safe bowl, combine the chocolate chips, heavy cream, and corn syrup.
- Microwave in 30-second intervals, stirring after each interval, until the chocolate is fully melted and the mixture is smooth.
- Stir in the vanilla extract.
- Finish the Dessert:
- Pour the chocolate ganache over the top layer of graham crackers, spreading it evenly with a spatula to cover completely.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the graham crackers to soften.
- Serve:
