Easy Mexican Taco Lasagna

Ingredients:

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup frozen corn (optional)
  • 1 cup black beans, drained and rinsed (optional)
  • 12-14 corn tortillas (or flour tortillas)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Mexican cheese blend or Monterey Jack cheese
  • 1 cup sour cream (optional)
  • 1 cup salsa (optional, for serving)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions:

  1. Cook the Meat: In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat if needed. Add the chopped onion and cook until softened. Stir in the minced garlic and cook for another minute.
  2. Add Seasonings: Sprinkle the taco seasoning mix over the meat and stir to combine. Add the diced tomatoes, tomato sauce, corn, and black beans (if using). Simmer for 5-10 minutes until the mixture is heated through and slightly thickened.
  3. Prepare the Tortillas: If using corn tortillas, you might want to lightly fry them in a little oil to make them more pliable, but this step is optional. If using flour tortillas, you can use them directly.
  4. Layer the Lasagna: Preheat your oven to 375°F (190°C). In a 9×13-inch baking dish, spread a thin layer of the meat mixture on the bottom. Place a layer of tortillas over the meat mixture. Spread a layer of sour cream over the tortillas (if using). Sprinkle a layer of cheddar cheese over the sour cream.
  5. Repeat Layers: Add another layer of the meat mixture, followed by tortillas, and then more cheese. Continue layering until all the ingredients are used, ending with a layer of cheese on top.
  6. Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve: Let the lasagna cool for a few minutes before serving. Garnish with chopped fresh cilantro and serve with salsa on the side if desired.
