Easy Red Potato Salad
Ingredients:
- 2 lbs red potatoes, washed and cut into bite-sized pieces
- 3 hard-boiled eggs, chopped (optional)
- 1/2 cup mayonnaise
- 1/4 cup sour cream (optional, for extra creaminess)
- 1 tablespoon Dijon mustard
- 2 tablespoons apple cider vinegar or white vinegar
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper to taste
- Paprika (optional, for garnish)
Instructions:
- Cook the Potatoes:
- Place the cut potatoes in a large pot and cover them with cold water.
- Add a pinch of salt and bring to a boil over medium-high heat.
- Cook the potatoes for 10-12 minutes, or until they are tender but not mushy. You should be able to pierce them easily with a fork.
- Drain the potatoes and allow them to cool slightly.
- Prepare the Dressing:
- In a large bowl, mix together the mayonnaise, sour cream (if using), Dijon mustard, vinegar, fresh dill, salt, and pepper. Adjust the seasoning to taste.
- Assemble the Salad:
- Add the cooked potatoes, celery, red onion, and chopped hard-boiled eggs (if using) to the bowl with the dressing.
- Gently toss everything together until the potatoes are well coated in the dressing.
- Chill:
- Cover and refrigerate the potato salad for at least 1 hour to allow the flavors to meld together.
- Serve:
- Just before serving, garnish with a sprinkle of paprika and a little extra dill if desired.
