Easy Red Potato Salad

Ingredients:

  • 2 lbs red potatoes, washed and cut into bite-sized pieces
  • 3 hard-boiled eggs, chopped (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream (optional, for extra creaminess)
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar or white vinegar
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper to taste
  • Paprika (optional, for garnish)

Instructions:

  1. Cook the Potatoes:
  • Place the cut potatoes in a large pot and cover them with cold water.
  • Add a pinch of salt and bring to a boil over medium-high heat.
  • Cook the potatoes for 10-12 minutes, or until they are tender but not mushy. You should be able to pierce them easily with a fork.
  • Drain the potatoes and allow them to cool slightly.
  1. Prepare the Dressing:
  • In a large bowl, mix together the mayonnaise, sour cream (if using), Dijon mustard, vinegar, fresh dill, salt, and pepper. Adjust the seasoning to taste.
  1. Assemble the Salad:
  • Add the cooked potatoes, celery, red onion, and chopped hard-boiled eggs (if using) to the bowl with the dressing.
  • Gently toss everything together until the potatoes are well coated in the dressing.
  1. Chill:
  • Cover and refrigerate the potato salad for at least 1 hour to allow the flavors to meld together.
  1. Serve:
  • Just before serving, garnish with a sprinkle of paprika and a little extra dill if desired.
