Egg Roll in a Bowl

Ingredients:

  • 1 lb ground pork or turkey
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 bag (14 oz) coleslaw mix (or shredded cabbage and carrots)
  • 1/4 cup soy sauce (low sodium preferred)
  • 1 tbsp sesame oil
  • 1 tsp ground ginger (or 1 tbsp fresh ginger, minced)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste
  • Optional toppings: sesame seeds, sriracha, or chopped cilantro

Instructions:

  1. Cook the Meat: In a large skillet over medium heat, cook the ground pork or turkey until browned. Drain any excess fat.
  2. Add Aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is soft.
  3. Add Cabbage: Stir in the coleslaw mix and cook for another 5 minutes, or until the cabbage is tender.
  4. Season: Add the soy sauce, sesame oil, ground ginger, salt, and pepper. Stir well to combine and heat through.
  5. Garnish and Serve: Remove from heat and garnish with sliced green onions and any optional toppings. Serve warm.

Tips:

  • You can customize this dish by adding other vegetables like bell peppers or mushrooms.
  • For a spicy kick, add some crushed red pepper flakes.
