Egg Roll in a Bowl
Ingredients:
- 1 lb ground pork or turkey
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 bag (14 oz) coleslaw mix (or shredded cabbage and carrots)
- 1/4 cup soy sauce (low sodium preferred)
- 1 tbsp sesame oil
- 1 tsp ground ginger (or 1 tbsp fresh ginger, minced)
- 2 green onions, sliced (for garnish)
- Salt and pepper to taste
- Optional toppings: sesame seeds, sriracha, or chopped cilantro
Instructions:
- Cook the Meat: In a large skillet over medium heat, cook the ground pork or turkey until browned. Drain any excess fat.
- Add Aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is soft.
- Add Cabbage: Stir in the coleslaw mix and cook for another 5 minutes, or until the cabbage is tender.
- Season: Add the soy sauce, sesame oil, ground ginger, salt, and pepper. Stir well to combine and heat through.
- Garnish and Serve: Remove from heat and garnish with sliced green onions and any optional toppings. Serve warm.
Tips:
- You can customize this dish by adding other vegetables like bell peppers or mushrooms.
