Flan au Coco (Coconut Flan) in 5 Minutes
Ingredients:
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) coconut milk
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut (optional for added texture)
- 1/2 cup sugar (for the caramel)
Instructions:
Step 1: Prepare the Caramel
- Make the Caramel:
- In a small saucepan, heat the sugar over medium heat until it melts and turns into a golden brown caramel. Stir occasionally to prevent burning.
- Pour the Caramel:
- Quickly pour the caramel into a round or rectangular flan mold (or individual ramekins), tilting the dish to coat the bottom evenly with the caramel. Set aside.
Step 2: Make the Flan Mixture
- Blend the Ingredients:
- In a blender, combine the sweetened condensed milk, coconut milk, eggs, and vanilla extract. Blend on high speed for about 30 seconds until smooth.
- Optional:
- If you want extra coconut texture, fold in the shredded coconut by hand after blending.
Step 3: Pour and Bake
- Pour the Mixture:
- Pour the flan mixture into the caramel-coated mold.
- Bake:
- Preheat the oven to 350°F (175°C). Place the flan mold in a large baking dish, and pour hot water into the dish to create a water bath (bain-marie), filling it halfway up the sides of the flan mold.
- Bake for 45-55 minutes, or until the flan is set and a knife inserted into the center comes out clean.
Step 4: Cool and Serve
- Cool:
- Remove the flan from the oven and let it cool at room temperature for about 30 minutes. Then refrigerate for at least 2 hours, or until fully chilled.
- Unmold:
- To serve, run a knife around the edges of the flan and invert it onto a serving plate, allowing the caramel to drizzle over the top.
