Good Ole Fashioned Mac and Cheese

Ingredients:

  • 8 oz elbow macaroni (or any pasta shape you prefer)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella (optional for extra creaminess)
  • 1/2 cup grated Parmesan cheese
  • 2 cups milk (whole milk works best)
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon mustard powder (optional, for extra flavor)
  • Salt and pepper to taste
  • 1/4 teaspoon paprika (optional, for garnish)

Instructions:

Step 1: Cook the Pasta

  1. Boil the Pasta:
  • Cook the elbow macaroni in salted boiling water according to package directions until al dente (usually about 7-8 minutes). Drain and set aside.

Step 2: Make the Cheese Sauce

  1. Make a Roux:
  • In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux. Cook for about 1-2 minutes, stirring constantly, until it turns golden but not browned.
  1. Add the Milk:
  • Gradually whisk in the milk, continuing to stir to avoid lumps. Bring the mixture to a simmer, allowing it to thicken slightly (about 3-5 minutes).
  1. Add Cheese and Seasoning:
  • Stir in the mustard powder, salt, pepper, and paprika (if using).
  • Add the shredded cheddar, mozzarella, and Parmesan, stirring constantly until the cheeses melt and the sauce is smooth and creamy.

Step 3: Combine Pasta and Cheese Sauce

  1. Mix Together:
  • Add the cooked macaroni to the cheese sauce and stir until the pasta is fully coated with the creamy cheese mixture.

Step 4: Bake (Optional)

  1. Optional Baking Step:
  • If you like baked mac and cheese with a crispy top, transfer the macaroni and cheese mixture to a greased 9×13-inch baking dish.
  • Sprinkle extra shredded cheese on top and bake at 350°F (175°C) for 20-25 minutes, or until the top is golden and bubbly.

Step 5: Serve

  • Serve hot and enjoy your Good Ole Fashioned Mac and Cheese as the ultimate comfort food side dish!

Optional Toppings:

  • Breadcrumbs: Before baking, sprinkle the top with buttered breadcrumbs for a crunchy texture.
  • Bacon: Add cooked, crumbled bacon for extra flavor.
