Greek Chicken Gyros
Ingredients:
For the Chicken Marinade:
- 1 lb (450g) boneless, skinless chicken breasts or thighs
- 3 tablespoons olive oil
- 3 tablespoons plain Greek yogurt
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1 tablespoon red wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1 cucumber, grated and excess water squeezed out
- 2 cloves garlic, minced
- Juice of 1/2 lemon
- 1 tablespoon olive oil
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper, to taste
For the Gyros:
- 4-6 pita bread or flatbreads
- 1 red onion, thinly sliced
- 1 tomato, diced
- 1/2 cucumber, diced
- 1/4 cup crumbled feta cheese
- Fresh parsley, chopped (optional)
Instructions:
- Marinate the Chicken:
- In a large bowl, mix together the olive oil, Greek yogurt, minced garlic, lemon juice, red wine vinegar, oregano, cumin, paprika, salt, and pepper.
- Add the chicken to the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, or up to overnight for best flavor.
- Prepare the Tzatziki Sauce:
- In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper.
- Mix well and refrigerate until ready to use.
- Cook the Chicken:
- Preheat your grill or a skillet over medium-high heat.
- Remove the chicken from the marinade and cook for about 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- Once cooked, let the chicken rest for a few minutes, then slice it into thin strips.
- Assemble the Gyros:
- Warm the pita bread or flatbreads in the oven or on a skillet.
- Spread a generous amount of tzatziki sauce on each pita.
- Top with slices of chicken, red onion, tomato, cucumber, feta cheese, and parsley if desired.
- Serve:
- Fold the pita bread around the fillings to create a wrap.
