Hearty Pre-Paycheck Stew

Ingredients:

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2-3 carrots, diced
  • 2-3 potatoes, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) mixed vegetables (or any frozen veggies)
  • 4 cups beef or vegetable broth
  • 1-2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 bay leaf
  • 1 cup dried beans (optional, soaked and cooked)
  • 1 tablespoon olive oil

Instructions:

  1. Brown the Meat:
  • In a large pot, heat olive oil over medium heat. Add the ground beef or turkey and cook until browned. Drain any excess fat.
  1. Sauté Vegetables:
  • Add chopped onion and garlic to the pot. Sauté for about 5 minutes until the onion is translucent.
  1. Add Other Vegetables:
  • Stir in the carrots, potatoes, and mixed vegetables. Cook for another 5 minutes.
  1. Add Liquids and Seasoning:
  • Pour in the diced tomatoes and broth. Add thyme, paprika, salt, pepper, and bay leaf. If using, add cooked beans.
  1. Simmer:
  • Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the vegetables are tender.
  1. Adjust Seasoning:
  • Taste and adjust seasoning if needed. Remove the bay leaf before serving.
  1. Serve:
  • Ladle the stew into bowls and enjoy!

Tips:

  • You can add any leftover vegetables you have on hand.
  • This stew freezes well, so consider making a double batch!
