Hearty Pre-Paycheck Stew
Ingredients:
- 1 lb ground beef or turkey
- 1 onion, chopped
- 2-3 carrots, diced
- 2-3 potatoes, diced
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) mixed vegetables (or any frozen veggies)
- 4 cups beef or vegetable broth
- 1-2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- 1 bay leaf
- 1 cup dried beans (optional, soaked and cooked)
- 1 tablespoon olive oil
Instructions:
- Brown the Meat:
- In a large pot, heat olive oil over medium heat. Add the ground beef or turkey and cook until browned. Drain any excess fat.
- Sauté Vegetables:
- Add chopped onion and garlic to the pot. Sauté for about 5 minutes until the onion is translucent.
- Add Other Vegetables:
- Stir in the carrots, potatoes, and mixed vegetables. Cook for another 5 minutes.
- Add Liquids and Seasoning:
- Pour in the diced tomatoes and broth. Add thyme, paprika, salt, pepper, and bay leaf. If using, add cooked beans.
- Simmer:
- Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the vegetables are tender.
- Adjust Seasoning:
- Taste and adjust seasoning if needed. Remove the bay leaf before serving.
- Serve:
- Ladle the stew into bowls and enjoy!
Tips:
- You can add any leftover vegetables you have on hand.
- This stew freezes well, so consider making a double batch!
