Heavenly Almond Cream Cake

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

For the Almond Cream Filling:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon almond extract

For the Almond Topping:

  • 1/2 cup sliced almonds, toasted
  • 2 tablespoons powdered sugar (optional)
  • Fresh berries for garnish (optional)

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
  1. Prepare the Cake Batter:
  • In a medium bowl, whisk together the flour, almond flour, baking powder, baking soda, and salt.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  • Mix in the vanilla and almond extracts.
  • Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and milk, beginning and ending with the dry ingredients. Mix until just combined.
  1. Bake the Cake:
  • Divide the batter evenly between the prepared cake pans and smooth the tops.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  1. Prepare the Almond Cream Filling:
  • In a chilled mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form.
  • Gently fold in the almond extract.
  1. Assemble the Cake:
  • Once the cakes are completely cooled, spread a layer of almond cream on top of one of the cakes.
  • Place the second cake layer on top.
  • Spread the remaining almond cream over the top and sides of the cake.
  1. Add Toppings:
  • Sprinkle the toasted sliced almonds over the top of the cake.
  • For an extra touch of sweetness, you can dust the cake with powdered sugar if desired.
  • Garnish with fresh berries if you like.
