homemade air fryer cottage pie
Ingredients:
For the Filling:
- 1 lb ground beef or lamb
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- 1 tsp dried thyme (optional)
For the Mashed Potatoes:
- 2 cups potatoes, peeled and diced
- 4 tbsp butter
- ½ cup milk
- Salt and pepper to taste
Instructions:
- Prepare the Mashed Potatoes:
- Boil the diced potatoes in salted water until tender (about 15 minutes). Drain and return to the pot.
- Add butter, milk, salt, and pepper. Mash until smooth and creamy. Set aside.
- Make the Filling:
- In a skillet over medium heat, cook the ground meat until browned. Drain excess fat.
- Add chopped onion, carrots, and garlic; cook until softened (about 5 minutes).
- Stir in tomato paste, beef broth, Worcestershire sauce, peas, thyme, salt, and pepper. Simmer for about 5 minutes.
- Assemble the Cottage Pie:
- Preheat your air fryer to 360°F (182°C).
- In a heatproof dish that fits your air fryer, layer the meat filling at the bottom. Spread the mashed potatoes evenly on top.
- Air Fry:
- Cook in the air fryer for about 15-20 minutes, or until the top is golden brown.
