Homemade Angel Biscuits

Ingredients:

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 2 tablespoons warm water (110°F/45°C)
  • 5 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter (2 sticks), cold and cut into small cubes
  • 2 cups buttermilk
  • 2 tablespoons melted butter (for brushing)

Instructions:

  1. Activate the Yeast:
  • In a small bowl, dissolve the active dry yeast in the warm water. Let it sit for about 5 minutes until it becomes frothy.
  1. Mix the Dry Ingredients:
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  1. Cut in the Butter:
  • Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter.
  1. Combine Wet and Dry Ingredients:
  • Pour the buttermilk and the activated yeast mixture into the flour mixture.
  • Stir until just combined, but do not overmix. The dough will be soft and slightly sticky.
  1. Roll Out the Dough:
  • Turn the dough out onto a lightly floured surface and gently knead it a few times.
  • Roll the dough out to about 1/2 inch thick and use a biscuit cutter (or the rim of a glass) to cut out biscuits.
  1. Prepare for Baking:
  • Place the biscuits on a greased or parchment-lined baking sheet, making sure they are touching each other for soft-sided biscuits or spaced apart for crisper sides.
  • Cover loosely with a kitchen towel and let them rise for 30-45 minutes (the yeast will give them a slight puff).
  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
  1. Bake the Biscuits:
  • Bake the biscuits in the preheated oven for 12-15 minutes, or until golden brown on top.
  1. Brush with Butter:
  • Once baked, brush the tops of the hot biscuits with melted butter.
  1. Serve:
    • Serve warm with butter, honey, or jam.
