Homemade Angel Biscuits
Ingredients:
- 2 1/4 teaspoons (1 packet) active dry yeast
- 2 tablespoons warm water (110°F/45°C)
- 5 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter (2 sticks), cold and cut into small cubes
- 2 cups buttermilk
- 2 tablespoons melted butter (for brushing)
Instructions:
- Activate the Yeast:
- In a small bowl, dissolve the active dry yeast in the warm water. Let it sit for about 5 minutes until it becomes frothy.
- Mix the Dry Ingredients:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Cut in the Butter:
- Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter.
- Combine Wet and Dry Ingredients:
- Pour the buttermilk and the activated yeast mixture into the flour mixture.
- Stir until just combined, but do not overmix. The dough will be soft and slightly sticky.
- Roll Out the Dough:
- Turn the dough out onto a lightly floured surface and gently knead it a few times.
- Roll the dough out to about 1/2 inch thick and use a biscuit cutter (or the rim of a glass) to cut out biscuits.
- Prepare for Baking:
- Place the biscuits on a greased or parchment-lined baking sheet, making sure they are touching each other for soft-sided biscuits or spaced apart for crisper sides.
- Cover loosely with a kitchen towel and let them rise for 30-45 minutes (the yeast will give them a slight puff).
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Bake the Biscuits:
- Bake the biscuits in the preheated oven for 12-15 minutes, or until golden brown on top.
- Brush with Butter:
- Once baked, brush the tops of the hot biscuits with melted butter.
- Serve:
- Serve warm with butter, honey, or jam.
