Homemade Creamed Corn

Sweet corn kernels are cooked in a luscious, creamy sauce made with butter, cream, and a hint of seasoning. This easy, homemade version of creamed corn is perfect for any meal!

Ingredients:

  • 4 cups fresh corn kernels (about 6-8 ears of corn) or 3 cups frozen corn
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 tbsp all-purpose flour (optional, for thickening)
  • 1 tbsp sugar (optional, to taste)

  • Fresh parsley or chives, chopped (for garnish)

Instructions:

  1. Prepare the Corn:
  • If using fresh corn, cut the kernels off the cobs. You should have about 4 cups of corn kernels. If using frozen corn, thaw it according to package instructions.
  1. Sauté the Aromatics:
  • In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened and translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  1. Cook the Corn:
  • Add the corn kernels to the skillet and cook for 5-7 minutes, stirring occasionally, until the corn is tender and heated through.
  1. Make the Creamy Sauce:
  • In a small bowl, whisk together the heavy cream, milk, and flour (if using) until smooth. The flour helps thicken the sauce, but it can be omitted if you prefer a thinner consistency.
  • Pour the cream mixture into the skillet with the corn and stir to combine.

  • Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce thickens and coats the corn. Stir occasionally to prevent sticking.
  • Stir in the sugar (if using) and season with salt and black pepper to taste.

  • If desired, stir in the grated Parmesan cheese for extra flavor and creaminess.
