Homemade Pineapple Soft Serve Ice Cream
Ingredients:
- 4 cups frozen pineapple chunks
- 1/2 cup coconut milk (or regular milk)
- 2 tablespoons honey or maple syrup (optional for sweetness)
- 1 teaspoon lemon juice (optional for a bit of tang)
- 1/2 teaspoon vanilla extract (optional for added flavor)
Instructions:
- Prepare the Pineapple:
- If you don’t have frozen pineapple chunks, you can cut fresh pineapple into pieces and freeze them overnight. Make sure they are solidly frozen before using.
- Blend the Ingredients:
- In a high-powered blender or food processor, add the frozen pineapple chunks, coconut milk, honey (if using), lemon juice, and vanilla extract.
- Blend on high until the mixture is smooth and creamy. You may need to stop and scrape down the sides occasionally to ensure everything blends well.
- If the mixture is too thick, add a bit more coconut milk to help it blend, but be careful not to add too much to keep the soft-serve texture.

- Once the mixture is smooth and soft-serve in texture, scoop it into bowls or cones for serving.
- For a fun presentation, you can transfer the mixture to a piping bag with a star tip and swirl it into bowls, like soft-serve from a machine.
