Homemade Turtle Candy with Pecans and Caramel
Ingredients:
- 2 cups pecan halves (toasted, optional)
- 1 cup soft caramel candies (store-bought or homemade), unwrapped
- 2 tablespoons heavy cream
- 2 cups semi-sweet or dark chocolate chips (or chocolate melts)
- Sea salt flakes (optional)
Instructions:
- Prepare a Baking Sheet: Line a baking sheet with parchment paper or a silicone baking mat. Arrange small clusters of 3-4 pecan halves on the sheet, spaced about 1 inch apart.
- Melt the Caramel: In a microwave-safe bowl, combine the unwrapped caramel candies and heavy cream. Microwave in 30-second intervals, stirring after each until smooth and melted. This should take 1-2 minutes total.
- Add Caramel to Pecans: Using a spoon, carefully drizzle about 1 tablespoon of melted caramel over each pecan cluster. Try to make sure the caramel touches all of the pecans to hold the cluster together. Let the caramel set for 10-15 minutes.
- Melt the Chocolate: Melt the chocolate chips in a microwave-safe bowl, microwaving in 30-second intervals and stirring in between, until smooth.
- Add Chocolate to Caramel Clusters: Spoon the melted chocolate over each caramel-pecan cluster, spreading it gently with the back of the spoon to cover the caramel completely. Optionally, sprinkle with a pinch of sea salt flakes.
- Let Set: Allow the candies to set at room temperature for about 1 hour, or speed up the process by placing them in the fridge for 15-20 minutes.
- Serve or Store: Once the chocolate is firm, your turtle candies are ready! Store them in an airtight container at room temperature or in the fridge for up to two weeks.
