Ingredients:

For the Crust and Topping:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small pieces

For the Lemon Filling:

  • 1 cup granulated sugar
  • 2 large eggs
  • 1/3 cup freshly squeezed lemon juice
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. Prepare the Crust and Topping: In a medium bowl, combine the flour, granulated sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press half of this mixture into the bottom of the prepared baking dish.
  3. Bake the Crust: Bake for 10-12 minutes, or until the edges are lightly golden.
  4. Prepare the Lemon Filling: While the crust is baking, whisk together the granulated sugar, eggs, lemon juice, flour, and salt in a bowl until smooth.
  5. Add the Filling: Pour the lemon filling over the baked crust.
  6. Add the Topping: Sprinkle the remaining crumb mixture over the lemon filling.
  7. Bake: Return to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown and the filling is set.
