Loaded Cheesy Pocket Tacos
Ingredients:
- For the Taco Filling:
- 1 pound ground beef or turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning mix
- 1 cup shredded cheddar cheese
- ½ cup chopped fresh cilantro (optional)
- For the Pocket Tacos:
- 8 small flour tortillas
- 1 cup shredded mozzarella cheese
- 1 cup refried beans (optional, for extra creaminess)
- 1 cup salsa or taco sauce
- 1 avocado, sliced (optional)
- Sour cream, for serving
- Fresh lime wedges, for serving
Instructions:
- Cook the Taco Filling:
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
- Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
- Sprinkle the taco seasoning mix over the meat and stir to combine. Add a splash of water if needed to help the seasoning distribute. Stir in the shredded cheddar cheese until melted and combined. Optionally, mix in the chopped cilantro.
- Prepare the Pocket Tacos:
- Preheat a large skillet or griddle over medium heat.
- Heat the flour tortillas in the skillet for about 30 seconds on each side until warm and pliable.
- Assemble the Pocket Tacos:
- Spread a layer of refried beans (if using) on one half of each tortilla.
- Spoon a generous amount of the taco filling over the beans.
- Sprinkle shredded mozzarella cheese on top of the filling.
- Fold the tortillas in half to create a pocket, pressing down gently.
- Cook the Pocket Tacos:
- Place the filled tortillas back in the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
- Serve:
- Remove from the skillet and cut each pocket taco in half if desired.
- Serve with salsa or taco sauce on the side, and garnish with sliced avocado, sour cream, and fresh lime wedges.
