Low-Carb Bacon Cheeseburger Casserole
Ingredients:
- 1 lb ground beef
- 6 slices bacon, cooked and crumbled
- 1 small onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 3 large eggs
- ½ cup heavy cream
- 1 ½ cups shredded cheddar cheese
- ¼ cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- Fresh parsley for garnish (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
- Cook the Beef:
- In a skillet over medium heat, cook the ground beef with the chopped onion, garlic powder, onion powder, salt, and pepper until the beef is browned and the onion is softened. Drain any excess fat.
- Assemble the Casserole:
- Spread the cooked beef mixture evenly in the prepared baking dish. Top with crumbled bacon and 1 cup of shredded cheddar cheese.
- Make the Egg Mixture:
- In a separate bowl, whisk together the eggs, heavy cream, mayonnaise, Dijon mustard, and Worcestershire sauce until smooth.
- Pour and Bake:
- Pour the egg mixture over the beef and bacon in the baking dish. Sprinkle the remaining ½ cup of cheddar cheese on top.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is set.
- Garnish and Serve:
- Remove from the oven and let the casserole cool for a few minutes. Garnish with fresh parsley (if desired), then slice and serve hot.
Optional Add-Ins:
- Add pickles, diced tomatoes, or sautéed mushrooms for a flavor boost.
- Drizzle with sugar-free ketchup or mustard for that classic burger taste.
