Luscious Chocolate Pecan Loaf
Ingredients:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- ½ cup vegetable oil
- 1 cup buttermilk
- 1 tsp vanilla extract
- 1 cup chopped pecans (toasted for extra flavor)
- ½ cup semi-sweet chocolate chips (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, beat the eggs. Then add the vegetable oil, buttermilk, and vanilla extract, mixing until well combined.
- Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Fold in Nuts and Chips: Gently fold in the chopped pecans and chocolate chips if using.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
