Luscious Chocolate Pecan Loaf

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup chopped pecans (toasted for extra flavor)
  • ½ cup semi-sweet chocolate chips (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, beat the eggs. Then add the vegetable oil, buttermilk, and vanilla extract, mixing until well combined.
  4. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in Nuts and Chips: Gently fold in the chopped pecans and chocolate chips if using.
  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve: Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
