Mango Crumble Bars

Ingredients:

For the Base and Topping:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup oats (old-fashioned)
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)

For the Mango Filling:

  • 2 cups fresh mango, peeled and diced (or use frozen mango, thawed)
  • 1/4 cup sugar (adjust based on sweetness of mango)
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract (optional)

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  1. Make the Crumble Mixture:
  • In a large bowl, combine flour, oats, brown sugar, melted butter, salt, and cinnamon (if using). Mix until crumbly.
  1. Set Aside Some Crumble:
  • Reserve about 1 cup of the crumble mixture for the topping. Press the remaining crumble mixture into the bottom of the prepared baking dish to form an even layer.
  1. Prepare the Mango Filling:
  • In another bowl, combine the diced mango, sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to coat.
  1. Assemble:
  • Pour the mango mixture over the crust in the baking dish, spreading it evenly. Sprinkle the reserved crumble mixture over the top.
  1. Bake:
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
  1. Cool and Slice:
  • Allow the bars to cool completely in the pan before slicing into squares.
  1. Serve:
  • Enjoy your mango crumble bars as a delightful dessert or snack!

Tips for Success:

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Variations: You can substitute mango with other fruits like peaches or berries for a different flavor.
