Meloui au Fromage (Moroccan Cheese Flatbread)

Ingredients:

For the Dough:

  • 3 cups (375g) all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 1 cup (240ml) warm water (adjust as needed)
  • 1/4 cup (60ml) vegetable oil or melted butter

For the Filling:

  • 1 cup (100g) shredded cheese (such as mozzarella, cheddar, or a blend)

For Cooking:

  • 2-3 tablespoons vegetable oil or butter (for cooking the flatbreads)

Instructions:

  1. Prepare the Dough:
  2. In a large bowl, mix the flour, sugar, salt, and instant yeast.
  3. Gradually add the warm water, stirring until a dough forms.
  4. Add the vegetable oil or melted butter and knead the dough for about 5-7 minutes until it is smooth and elastic. If the dough is too sticky, add a bit more flour; if too dry, add a bit more water.
  5. Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour, or until it doubles in size.
  6. Prepare the Cheese Filling:
  7. While the dough is rising, shred your cheese and set it aside.
  8. Shape the Flatbreads:
  9. After the dough has risen, punch it down and divide it into 6-8 equal portions.
  10. On a lightly floured surface, roll each portion into a thin circle, about 6-8 inches (15-20 cm) in diameter.
  11. Assemble the Meloui au Fromage:
  12. Sprinkle a generous amount of shredded cheese evenly over the surface of each circle.
  13. Fold the edges of the circle towards the center, creating a square or rectangle. Then, fold the dough over itself to create a layered, folded shape.
  14. Gently press down on the folded dough to flatten it slightly.
  15. Cook the Flatbreads:
  16. Heat a skillet or griddle over medium heat and add a little oil or butter.
  17. Cook each folded flatbread for about 2-3 minutes on each side, or until golden brown and crispy. The cheese inside will melt as the flatbread cooks.
  18. Serve:
  19. Once cooked, transfer the flatbreads to a paper towel-lined plate to absorb any excess oil.
  20. Serve warm and enjoy!
