Meloui au Fromage (Moroccan Cheese Flatbread)
Ingredients:
For the Dough:
- 3 cups (375g) all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon instant yeast
- 1 cup (240ml) warm water (adjust as needed)
- 1/4 cup (60ml) vegetable oil or melted butter
For the Filling:
- 1 cup (100g) shredded cheese (such as mozzarella, cheddar, or a blend)
For Cooking:
- 2-3 tablespoons vegetable oil or butter (for cooking the flatbreads)
Instructions:
- Prepare the Dough:
- In a large bowl, mix the flour, sugar, salt, and instant yeast.
- Gradually add the warm water, stirring until a dough forms.
- Add the vegetable oil or melted butter and knead the dough for about 5-7 minutes until it is smooth and elastic. If the dough is too sticky, add a bit more flour; if too dry, add a bit more water.
- Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Prepare the Cheese Filling:
- While the dough is rising, shred your cheese and set it aside.
- Shape the Flatbreads:
- After the dough has risen, punch it down and divide it into 6-8 equal portions.
- On a lightly floured surface, roll each portion into a thin circle, about 6-8 inches (15-20 cm) in diameter.
- Assemble the Meloui au Fromage:
- Sprinkle a generous amount of shredded cheese evenly over the surface of each circle.
- Fold the edges of the circle towards the center, creating a square or rectangle. Then, fold the dough over itself to create a layered, folded shape.
- Gently press down on the folded dough to flatten it slightly.
- Cook the Flatbreads:
- Heat a skillet or griddle over medium heat and add a little oil or butter.
- Cook each folded flatbread for about 2-3 minutes on each side, or until golden brown and crispy. The cheese inside will melt as the flatbread cooks.
- Serve:
- Once cooked, transfer the flatbreads to a paper towel-lined plate to absorb any excess oil.
- Serve warm and enjoy!
