Mexican Shrimp Cocktail
Ingredients:
- 1 pound raw shrimp, peeled and deveined
- 1/2 cup diced cucumber
- 1/2 cup diced avocado
- 1/2 cup diced red onion
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1-2 jalapeños, finely chopped (adjust to taste)
- Juice of 2 limes
- 1 cup ketchup
- 1/2 cup clam juice or tomato juice
- Salt and pepper to taste
- Tortilla chips for serving
Instructions:
- Cook the Shrimp:
- Bring a pot of salted water to a boil. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Drain and rinse with cold water to stop the cooking process. Allow to cool, then chop into bite-sized pieces.
- Mix the Ingredients:
- In a large bowl, combine the cooled shrimp, cucumber, avocado, red onion, tomatoes, cilantro, and jalapeños.
- Prepare the Sauce:
- In a separate bowl, mix together the lime juice, ketchup, clam juice (or tomato juice), and season with salt and pepper.
- Combine and Chill:
- Pour the sauce over the shrimp mixture and gently toss to coat. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve:
- Serve the shrimp cocktail in individual cups or bowls with tortilla chips on the side.
Tips:
- Garnish: Add extra lime wedges or avocado slices for garnish.
- Additions: You can also add diced mango or a splash of hot sauce for a fruity twist!
