Mexican Shrimp Cocktail

Ingredients:

  • 1 pound raw shrimp, peeled and deveined
  • 1/2 cup diced cucumber
  • 1/2 cup diced avocado
  • 1/2 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1-2 jalapeños, finely chopped (adjust to taste)
  • Juice of 2 limes
  • 1 cup ketchup
  • 1/2 cup clam juice or tomato juice
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions:

  1. Cook the Shrimp:
  • Bring a pot of salted water to a boil. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Drain and rinse with cold water to stop the cooking process. Allow to cool, then chop into bite-sized pieces.
  1. Mix the Ingredients:
  • In a large bowl, combine the cooled shrimp, cucumber, avocado, red onion, tomatoes, cilantro, and jalapeños.
  1. Prepare the Sauce:
  • In a separate bowl, mix together the lime juice, ketchup, clam juice (or tomato juice), and season with salt and pepper.
  1. Combine and Chill:
  • Pour the sauce over the shrimp mixture and gently toss to coat. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  1. Serve:
  • Serve the shrimp cocktail in individual cups or bowls with tortilla chips on the side.

Tips:

  • Garnish: Add extra lime wedges or avocado slices for garnish.
  • Additions: You can also add diced mango or a splash of hot sauce for a fruity twist!
