Mini Meatloaf Muffins
Ingredients:
- 1 pound ground beef (or turkey)
- 1 cup breadcrumbs (plain or Italian)
- 1/2 cup milk
- 1/2 cup ketchup (plus extra for topping)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (optional)
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- Optional: 1 teaspoon dried herbs (like oregano or thyme)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
- Mix Ingredients: In a large bowl, combine the ground beef, breadcrumbs, milk, 1/2 cup ketchup, onion, bell pepper, egg, garlic powder, Worcestershire sauce, salt, and pepper. Mix until just combined.
- Fill Muffin Tins: Spoon the mixture into the muffin tin, filling each cup about 2/3 full.
- Add Topping: Top each mini meatloaf with a little extra ketchup.
- Bake: Bake for 25-30 minutes, or until cooked through (internal temperature should reach 160°F/70°C).
- Cool and Serve: Let them cool for a few minutes before removing from the tin. Serve warm, and enjoy!
These mini meatloafs are great for meal prep and freeze well, too!
