Mini Meatloaf Muffins

Ingredients:

  • 1 pound ground beef (or turkey)
  • 1 cup breadcrumbs (plain or Italian)
  • 1/2 cup milk
  • 1/2 cup ketchup (plus extra for topping)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (optional)
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Optional: 1 teaspoon dried herbs (like oregano or thyme)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
  2. Mix Ingredients: In a large bowl, combine the ground beef, breadcrumbs, milk, 1/2 cup ketchup, onion, bell pepper, egg, garlic powder, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Fill Muffin Tins: Spoon the mixture into the muffin tin, filling each cup about 2/3 full.
  4. Add Topping: Top each mini meatloaf with a little extra ketchup.
  5. Bake: Bake for 25-30 minutes, or until cooked through (internal temperature should reach 160°F/70°C).
  6. Cool and Serve: Let them cool for a few minutes before removing from the tin. Serve warm, and enjoy!

These mini meatloafs are great for meal prep and freeze well, too!
